"The Bible of Box Schemes" - over 360 recipes
The Boxing Clever Cookbook is different. The first of its kind in the UK, it is more than a recipe book, it is a manual for the cook of the house. It is written for subscribers of vegetable box schemes, those who love or grow their own vegetables, have an allotment, or subscribe to a CSA (Community Supported Agriculture) scheme. It is based on the UK's biggest and oldest CSA scheme, EarthShare, which is situated in Moray, North-east Scotland. The internationally renowned Soil Association, who licence organic farms and forests across the UK, are backing the book and have written the foreword.
The book is packed with over 360 seasonal recipes for the 12 months of the year, including beetroot pesto, swede bruschetta, 15 recipes for curly kale and 19 recipes for purple sprouting broccoli. It addresses day-to-day cooking for individuals or families with easy-to-follow instructions. Why spend hours in the kitchen when you can prepare healthy meals quickly. It contains a section on how best to store vegetables. Farming news is also included in a way that doesn't send you to sleep. Most usefully, dotted about the book are "sprout snippets" (gems of culinary wisdom). Bon appetit.
